Pizza is part of the identity of Naples. In 2017 UNESCO added the art of the Neapolitan pizzaiuolo to the Representative List of the Intangible Cultural Heritage of Humanity.

The art of the pizzaiuolo

UNESCO describes four phases that cover the preparation of the dough and its baking in a wood-fired oven, with a rotating movement by the baker. The pizzaiuolo works in view of the customers, in the bottega. UNESCO notes that about 3,000 pizzaiuoli work in Naples, and that knowledge is passed on mainly through apprenticeship.
